There’s a 5-gallon bucket of rancid beef tallow I rendered sitting in a closet or storage somewhere that wishes I’d read this sooner. I’m not sure what killed it, but I probably wasn’t fastidious enough about getting all of the muscle tissue separated from the fat, and I only filtered it once.
One thing people who haven’t yet rendered fat may not know is the potential for addiction to the cracklings. Damn… golden brown crispy beef fat with little sea salt and vinegar (or lime) just got stuck in my brain again.
